To prepare this easy recipe, wash and soak soybeans overnight. Next day, boil them in a pressure cooker for 1-2 whistles.
Wash and chop coriander leaves, parsley and spring onion.
Now, take a large bowl and squeeze the extra water from soybean. Add the chopped coriander leaves, parsley, spring onion, garlic. Mix well. Soak bread in a little water and squeeze it well. Add to the soybean mixture and combine well to make a grainy texture. Now, add baking soda, cumin powder, salt and pepper. Mix well, and allow the mixture to rest for a while.
Make small balls of the mixture and place them on a tray. Now, put a wok over medium flame and heat oil in it. When the oil is hot enough, shallow fry the falafel and serve hot with hummus or mayonnaise.
